Diablo Verde Easy Enchiladas

  Ingredients

  • Cooked Chicken, or Shrimp
  • Corn or Wheat Tortillas
  • Shredded Cheese 
  • 1 Jar of Salsa Diablo Verde
  • 1 Tablespoon of Oil
  • 10 x 8 Pan 

Steps

  • Preheat oven to 350 degrees
  • Lightly oil pan
  • Layer the following in pan
  • Tortillas, Chicken, Cheese,4 oz. Salsa Diablo Verde
  • Repeat Layers
  • Top with Tortillas and the remaining Salsa Diablo Verde
  • Cover with foil and cook for 25 min at 350 degrees
  • Uncover, add Cheese and cook @ 350 for an additional 5 min.
  • Serve and Enjoy!

Chilaquiles with Chicken

Ingredients

  • 1 bag of tortilla chips
  • Shredded Rotisserie Chicken
  • 1 bottle of Diablo Verde Creamy Cilantro Sauce 
  • 1 cup shredded Monterrey Jack Cheese
  • 1 cup Mozzarella Company Menonina Jalapeno Cheese 

Steps

  • Layer Tortilla Chips, Chicken, Diablo sauce and Cheese
  • Repeat Layers
  • Bake at 350 for 30 minutes until bubbly

Diablo Verde Shrimp Saute

Ingredients

  • 32 oz peeled wild caught shrimp (marinate with salt, pepper and garlic powder)
  • 1 Green Bell Pepper (5 oz)
  • 1 Red Bell Pepper (5 oz)S
  • 1 Squash (12 oz)
  • 1 Zucchini (12 oz)
  • 4 Garlic Cloves
  • 1 1/3 cup Diablo Verde (14 oz)

Steps

  • Saute shrimp until fully cooked (but not overdone) drain any excess liquid
  • Add vegetables and continue sauteing for 1-3 minutes
  • Add Diablo Verde and mix, coating all shrimp and vegetables with sauce
  • Garnish with fresh cilantro and enjoy a healthy meal
  • May be served over rice, quinoa, pasta or potatoes

Diablo Verde Coleslaw

 Ingredients

  • 1 Medium Purple Cabbage (sliced in strips) 
  • 3 Medium Carrots (Shredded)
  • Chopped Celery (to taste, 3-5 stalks)
  • 4 oz. Diablo Verde Creamy Cilantro Sauce
  • 4 oz. Balsamic Vinegar
  • Salt and Pepper to taste
  • Chopped Radishes (optional)
  • Black Beans (optional
  • Corn Kernels (optional)

Steps

  • Mix together 4 ounces of your favorite Diable Verde Creamy Cilantro Sauce with 4 ounces of balsamic vinegar
  • Toss all vegetables into a bowl and toss with Diablo Verde and vinegar mix.
  • Enjoy!  May be served over a half an avocado

Diablo Verde Scrambled Eggs

Ingredients

  • 1.3 oz of Red Bell Pepper (or other favorite vegetable)
  • 2 Fresh Cage-free Eggs
  • 2 Tablespoons of Diablo Verde plus 1/2 Tablespoon to drizzle on top.
  • Half an Avocado cut into bite size pieces


Steps

  • Saute vegetable while whipping together Diablo Verde and 2 Eggs
  • Pour egg mixture into pan and cook on low heat
  • When done serve Diablo Scrambled Eggs with Avocado and a drizzle a little more Diablo Verde on top

Easy Diablo Verde Salmon

 Ingredients

  • Salmon Fillets
  • Salt, Pepper, Garlic Powder to taste
  • Diablo Verde Creamy Cilantro Sauce

Steps

  • Preheat oven to 350 degrees
  • Season Salmon Fillet with Salt, Pepper and Garlic Powder to taste
  • Bake for 30-35 minutes
  • Pour Diablo Verde Creamy Cilantro Sauce over the Fillet
  • Return to oven for 5 minutes
  • Enjoy!  Serve over salad, rice or pasta

Diablo Southwest Chicken Salad

Ingredients

For Chicken

  • 2 medium chicken breasts
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

For Salad

  • 9 oz bag of Romaine lettuce (or greens of your choice)
  • 1 avocado sliced 
  • Lemon 
  • ¾ cup cherry tomatoes or chopped tomatoes
  • 1 cup black beans (drained)
  • 1 cup sweet corn kernels (drained)
  • 4 oz. Salsa Diablo Verde

Steps

Oil pan and sauté seasoned chicken

While chicken is cooking, toss greens, tomatoes, black beans, corn in large salad bowl

Squeeze lemon juice on the sliced avocado to prevent browning and add the sliced avocados on top

When the chicken is done cooking, cut in ¼” slices and add to salad bowl

Pour your favorite Salsa Diablo Verde flavor on the salad

Serve and Enjoy! Serves 4.

Diablo Avocado Healthier Traditional Chicken Salad

 Ingredients

  

  • 2 medium chicken breasts or 1 ½ cup cooked chicken chopped into ¼” cubes
  • Garlic clove (if cooking chicken)
  • ¼ cup lemon or lime juice (2 lemons/limes)
  • Half an avocado smashed
  • One celery stalk thinly chopped
  • ¼ cup chopped red onion
  • ¼ cup chopped pecans
  • One apple chopped into ¼” cubes
  • 4 oz. Salsa Diablo Verde
  • Salt and pepper to taste

Steps

  

  • Boil chicken breasts with a garlic clove, ¼ teaspoon salt and a tablespoon of lemon added to the water for 15 mins or until cooked. Alternatively use pre-cooked chicken. 
  • Squeeze lemon/lime juice on the smashed avocado and chopped apple pieces to prevent browning
  • Mix all ingredients in a bowl.
  • Maybe served in avocado halves, over greens, with crackers, on sandwich bread, pita bread or in a tortilla.
  • Serve and enjoy! Serves 4

Diablo Potatoes

 Ingredients

  

  • 5 medium gold potatoes peeled and sliced into ¼” or ½” slices
  • ¼ cup lemon or lime juice (2 lemons/limes)
  • Garlic clove 
  • 2 tablespoons garlic powder
  • ¼ cup olive oil
  • 4 oz. Salsa Diablo Verde
  • Salt and pepper to taste
  • 8 x 11 glass baking dish (spray with oil)

Steps

  • Pre-heat oven to 350 degrees.
  • Place sliced potatoes in a pot and cover with water. Add a garlic clove, ¼ teaspoon salt and a tablespoon of lemon added to the water. Bring to a boil and boil for 12 mins or until just tender when pierced with a fork.
  • When potatoes are cooked, drain water and place potatoes in a single layer in a sprayed glass baking dish. Pour the remaining lemon juice on the potatoes; sprinkle the garlic powder over the potatoes and the olive oil. Spoon 4 oz. of Salsa Diablo Verde over the potatoes.
  • Bake in a pre-heated oven, uncovered for 5 minutes.
  • Serve and Enjoy! Serves 4-6.
