Easy Enchiladas

  Ingredients

  • Cooked Chicken, or Shrimp
  • Corn or Wheat Tortillas
  • Shredded Cheese 
  • 1 Jar of Salsa Diablo Verde
  • 1 Tablespoon of Oil
  • 10 x 8 Pan 

Steps

  • Preheat oven to 350 degrees
  • Lightly oil pan
  • Layer the following in pan
  • Tortillas, Chicken, Cheese,4 oz. Salsa Diablo Verde
  • Repeat Layers
  • Top with Tortillas and the remaining Salsa Diablo Verde
  • Cover with foil and cook for 25 min at 350 degrees
  • Uncover, add Cheese and cook @ 350 for an additional 5 min.
  • Serve and Enjoy!

Chilaquiles with Chicken

 

Ingredients

  • 1 bag of tortilla chips
  • Shredded Rotisserie Chicken
  • 1 bottle of Diablo Verde Creamy Cilantro Sauce 
  • 1 cup shredded Monterrey Jack Cheese
  • 1 cup Mozzarella Company Menonina Jalapeno Cheese 

Steps

  • Layer Tortilla Chips, Chicken, Diablo sauce and Cheese
  • Repeat Layers
  • Bake at 350 for 30 minutes until bubbly

Diablo Shrimp Saute

Ingredients

  • 32 oz peeled wild caught shrimp (marinate with salt, pepper and garlic powder)
  • 1 Green Bell Pepper (5 oz)
  • 1 Red Bell Pepper (5 oz)S
  • 1 Squash (12 oz)
  • 1 Zucchini (12 oz)
  • 4 Garlic Cloves
  • 1 1/3 cup Diablo Verde (14 oz)

Steps

  • Saute shrimp until fully cooked (but not overdone) drain any excess liquid
  • Add vegetables and continue sauteing for 1-3 minutes
  • Add Diablo Verde and mix, coating all shrimp and vegetables with sauce
  • Garnish with fresh cilantro and enjoy a healthy meal
  • May be served over rice, quinoa, pasta or potatoes

Diablo Scrambled Eggs

Ingredients

  • 1.3 oz of Red Bell Pepper (or other favorite vegetable)
  • 2 Fresh Cage-free Eggs
  • 2 Tablespoons of Diablo Verde plus 1/2 Tablespoon to drizzle on top.
  • Half an Avocado cut into bite size pieces


Steps

  • Saute vegetable while whipping together Diablo Verde and 2 Eggs
  • Pour egg mixture into pan and cook on low heat
  • When done serve Diablo Scrambled Eggs with Avocado and a drizzle a little more Diablo Verde on top
